Tonight we baked a whole wheat carrot cake and garnished it with raspberries, oranges, and a curd made with oranges and eggs. I whipped up a buttercream frosting using yogurt. YUMMY!!!
Recipe:
2 Cups Whole Wheat Flour
2 Cups White Flour
1 Cup Sugar
1 1/2 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
Sift dry ingredients
Mix dry ingredients into the wet…
1/2 C melted Butter
1 small can pineapple w/juice
1 grated carrot
Handful of raisins
Handful of craisins
2 eggs
Bake 350 degrees 45 minutes in a well oiled 9 inch round cake pan.
Let cool then carefully cut in half
(The cake was crumbly so it totally fell apart)
Pour half a batch of orange curd in the middle.
Paste some buttercream on top and garnish with fresh raspberries and oranges.
Use the curd as a sauce for extra yummyness.
Curd:
Orange zest from one orange
6 egg yolks
Juice from two oranges
1 cup sugar
1/2 tsp salt

Simmer on stove until slow boil stirring constantly.
Let cool completely while you and hubby play a game of checkers.
Buttercream:
1 stick softened butter
Pinch salt
2 Cups powdered sugar
1/4 C Plain Greek Yogurt
Whip
