Zucchini Bread

Last night I made whole wheat zucchini bread! This recipe made three loaves, it is only 24 hours later and we are down to the last loaf

Here is the recipe:

2 cups grated zucchini 

6 eggs

1 cup freshly ground golden flax seeds

1 cup sour cream

I mixed these first ingredients in my mixer until light and fluffy.

Then added in 1 1/2 c Brown Sugar


1 cup White Sugar

4 cups whole wheat flour

1/2 tsp baking powder

2 tsp baking soda

2 tsp sea salt

2 cups white flour

1 tsp nutmeg 


Mix the dough well and grease three bread pans.

As a final opptional step throw a bag of milk chocolate chips into the batter.

Divide the dough between the three bread pans and bake for one hour at 350.
