Yellow Squash Basmati Delight

Eat Colors for your health
My brother in law Lynn who lives in St George brought us a huge bag of yellow squash from his garden this week and I made this stir fry the other night!

Basmati Rice

4 cups water
2 cups white basmati rice
one thumb size piece of ginger cut into slices
2 tsp sea salt
1 tsp golden flax seeds

Boil the water and add in the ginger, salt, and flax

Bring it to a rolling boil

Add the rice, lower the heat, put a lid on it, and let it simmer for twenty minutes

While the rice is cooking heat up your wok or a frying pan

Dice 8 cloves of garlic
1 purple onion
1 red pepper
a bunch of green onions
and
grate up one carrot and one sweet potato
Sea Salt and Pepper to taste

Put about 1/4 cup of Olive Oil in the bottom of the wok and slowly add in the veges

While they are frying cut up about six small yellow squash
These only need a few minutes in a hot wok

Serve over the rice and enjoy!
